INGREDIENTS
▢3 cups cauliflower florets, washed and chopped
▢1.5 tablespoons equilavent organic stevia in place of sugar
▢1 teaspoon real vanilla
▢2 tablespoons fresh lemon juice
▢1 teaspoons lemon zest
▢2 tablespoons coconut oil (melted)
▢1 scoop MCT oil powder (vanilla)
▢1/4 cup coconut milk (from carton)
INSTRUCTIONS
- After chopping cauliflower, steam it until it is very tender (you can do this in a steamer basket on the stovetop or by microwaving it in a bowl with 1/4 cup water for 1-2 minutes). Once cooked place the cauliflower in the fridge to cool.
- Next, place cooled cauliflower florets, stevia, vanilla, lemon juice and zest, coconut oil, MCT oil powder and almond milk in a blender or food processor. Blend until it forms a smooth whipped cream like texture.
- Put in the fridge. Serves 2. Enjoy!
