COURSE: Main Course DIFFICULTY: Easy SERVINGS: 4 INGREDIENTS ▢1 small pumpkin or 2 cups pumpkin puree ▢1 tbsp olive oil ▢1 onion, chopped ▢2 garlic cloves, minced ▢1 tbsp fresh ginger, grated ▢4 cups water or broth ▢2 tbsp Divine Health Collagen Powder ▢1 tsp turmeric ▢Sea salt and pepper to taste ▢Fresh parsley or cilantro for garnish INSTRUCTIONS If using a fresh pumpkin, cut it in half, remove the seeds, and roast at 400°F for 30 minutes or until soft. Scoop out the flesh. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft. Stir in ginger, turmeric, and roasted pumpkin (or pumpkin puree), and cook for 2-3 minutes. Add water or broth, and bring the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes. Stir in Divine Health Collagen Powder and blend the soup until smooth using an immersion blender. Season with salt and pepper, and garnish with fresh herbs. Serve warm.
