This unique cheese may be trending in the U.S. these days, but it’s been consumed in Greece for hundreds of years. When cooked, it becomes crispy on the outside and gooey on the inside — and it offers a delicious salty taste, too. It’s versatile enough to add to many recipes you’re already preparing at home. But how healthy is it? How does it match up against other cheeses, including protein and calcium content? Let’s dig in. What is halloumi cheese? Halloumi cheese is a semi-hard, unripened and brined cheese that’s traditionally made from sheep’s milk in the Greek island of Cyprus. In the U.S. (and at Trader Joe’s), grilling halloumi cheese is also made from cow and goat milk. Halloumi is free from rennet, an enzyme that’s commonly used in cheesemaking. Because rennet is often derived from the stomach of calf, lamb and goat, people on a vegetarian diet typically won’t eat cheeses made with the enzyme. Halloumi has a unique taste and texture. It’s firm and salty and has been compared to a thick feta, although halloumi has a smoother texture. It’s when the cheese is grilled, pan-fried or baked that it’s true delicious flavor emerges. It becomes a savory treat that’s crispy on the outside and gooey on the inside. The texture and taste of this grilling cheese are what make it so versatile and explain its growing popularity. It can be added to salads, wraps, tacos, burgers and more. Nutrition facts One slice (roughly 25 grams) of halloumi nutrition contains about: Calories: 74 Total Fat: 6 g Saturated Fat: 4 g Protein: 5 g Sodium: 300 mg (8%–13% DV*) Calcium: 180 mg (18% DV) *Daily Value: Percentages are based on a diet of 2,000 calories a day. Potential benefits 1. High in protein Just one thin slice, or 25 grams, of halloumi cheese contains five grams of protein. Consuming enough high-protein foods regularly is important for many body functions, including providing energy, helping build muscle, supporting the absorption of nutrients and stabilizing blood sugar levels. Research published in Nutrients suggests that individuals may benefit from increasing their intake and frequency of consumption of protein. Halloumi wouldn’t necessarily be considered the highest quality protein because of its salt and saturated fat content, but consuming it in moderation can be beneficial. 2. Good source of calcium Halloumi cheese also serves as a good source of calcium. According to researchers in Greece, the calcium content in the grilling cheese depends on the brining process, but 80 percent of the calcium found in the cheese comes from the casein molecules. We know that calcium is a key nutrient in our bodies and maintaining adequate levels is important. Consuming high-calcium foods like halloumi can help support heart and bone health. 3. Doesn’t contain lactose Lactose intolerance is a spectrum, as some people who deal with this allergy may be able to eat many cheeses while others can suffer stomach issues after just one bite of ice cream. Halloumi is made from sheep and goat milk, both of which contain less lactose than milk and generally cause fewer allergy issues. 4. Vegetarian-friendly (but check first) Many halloumi products aren’t made with rennet, so they are considered vegetarian. That said, you’ll want to double-check the product label to ensure that it’s not made with animal-derived rennet. Research published in the Journal of the International Society of Sports Nutrition suggests that the typical vegetarian diet tends to be high in carbohydrates and low in protein. Adding halloumi to some meals throughout the month can be helpful in maintaining proper nutrient levels. Potential downsides Halloumi is a salty cheese, with up to 13 percent of your daily value in just one slice. Therefore, when eaten in excess, it’s easy to go overboard on your daily sodium intake. This frying cheese is also high in saturated fat, with one slice accounting for a good portion of your daily value. While saturated fat remains vilified, research recently has shown that saturated fat may not cause the health problems it was long suspected of. In fact, a 2022 study declared that “saturated fats have no effect on cardiovascular disease, cardiovascular mortality or total mortality.” The fat that undoubtedly does cause health issues is trans fat, and halloumi cheese doesn’t contain any of this fat. Regardless, because of its sodium level and being somewhat high in calories like all cheeses, moderation is recommended. How to use You’ll be able to find halloumi cheese in many specialty grocers, including places like Trader Joe’s and Whole Foods. Natural food stores commonly carry grilling cheese, and cheese shops will likely carry halloumi as well. Although halloumi is traditionally made in Greece, there are other versions of grilling or frying cheese that are prepared by dairy and goat farmers in the United States and Canada. Like most other cheeses, halloumi can be enjoyed by itself or added to a range of recipes to add texture and flavor. It’s very easy to cook halloumi, as it can be pan-fried, grilled and baked. Halloumi has a high fat content, so it doesn’t require adding oil when cooking. Here are some simple ideas for cooking this grilling cheese: Pan fry: Cut the cheese into slices that are about a half-inch thick. Some products already come precut and packaged. Cook each side in a nonstick frying pan over medium heat. Let each side dry-fry for about 1–2 minutes, until it becomes brown and crispy. Bake: Add half-inch slices to an ovenproof dish or baking sheet, and drizzle them with olive oil. Bake at 390 degrees Fahrenheit for 10–15 minutes until the cheese begins to brown on edges. Grill: Coat half-inch cheese slices with olive oil, and grill over high heat. You’ll want to turn the cheese slices occasionally and grill for about 2–5 minutes, until it begins to crisp. You can also cut the cheese into cubes and grill it on skewers. Now that you’ve learned how to cook halloumi cheese, you’ll probably need some ideas about how to use it in your everyday recipes. Here are a few: Add it to any salad Add it to a grass-fed burger Add it to a vegetarian wrap Use it to make vegetarian-friendly tacos Add it to this Carne Asada Tacos Recipe Swap out the beef, and make a vegetarian-friendly burger Use it to make grilled cheese on sourdough bread Use it to make a Caprese salad or panini — swap out the mozzarella Put it into strips to bake cheese fries Substitutes It’s difficult to find a cheese that can be grilled and have the same taste and consistency as halloumi. You may be able to use tofu or paneer as a substitute for some halloumi recipes. When it comes to swapping out meats or other cheeses for halloumi, there are a lot of possibilities. This grilling cheese can take the place of mozzarella in salads and paninis. It can also replace meats used for burgers, wraps and baked dishes. Precautions For people who are avoiding foods high in sodium and excessive salt intake, it’s best to limit or even avoid salty cheeses like grilling cheese. Final thoughts Halloumi cheese, also called grilling cheese, is a unique type of cheese that was originally consumed in Greece. Rich in protein and calcium, grilling cheese offers important nutrients and is considered vegetarian-friendly when made without animal rennet. It’s easy to prepare grilling cheese by dry pan-frying, baking or grilling it. It has a crispy crust and becomes soft and gooey on the inside when cooked. 					<description><![CDATA[<p>Michael Greger M.D. FACLM via Nutrition Facts &#8211; How does sorghum compare with other grains in terms of protein, antioxidants, and micronutrients? And the benefits of red sorghum compared to black and white varieties? Sorghum is “the Forgotten Grain.” The United States is the top producer of sorghum, “but it is typically not used to produce food for American consumers.” Instead, it’s used mainly “to produce livestock feed, pet foods, household building materials…but it is a preferred grain for human diets in other parts of the world, such as Africa and Asia.” There, it’s been a staple and eaten for thousands of years, making it currently the fifth most popular grain grown after wheat, corn, rice, and barley, beating out oats and rye. Sorghum is gluten-free Because sorghum is gluten-free and “can be deﬁnitively considered safe for consumption by people with celiac disease,” we’re starting to see it “increasingly used” as actual human food in the United States, so I decided to look into just how healthy it might be. As you can see below and at 0:59 in my video Is Sorghum a Healthy Grain?, it is comparable to other grains when it comes to protein. Since when do we have to worry about getting enough protein, though? Fiber is what Americans are desperately deficient in, and sorghum does pull towards the front of the pack, as seen here and at 1:06 in my video. The micronutrient composition is relatively “unremarkable, relative to other cereal grains.” As shown below and at 1:15 in my video, you can see how it rates on minerals, for example. Where sorghum shines is its polyphenol content. Polyphenols are plant compounds and “their regular consumption has been associated with a reduced risk of a number of chronic diseases, including cancer, cardiovascular disease (CVD), and neurodegenerative disorders.” It’s also been shown to have “a protective effect…on all-cause mortality.” If you compare different grains, sorghum really does pull ahead, helping to explain why its antioxidant power is so much higher, as seen here and at 1:40 in my video. Now, sorghum gets its grainy butt kicked by fruits and vegetables, but when compared to other grains, a sorghum-based breakfast cereal, for example, might have about eight times the antioxidants than a whole wheat-based one. What we care about, though, isn’t antioxidant activity in a test tube, but antioxidant activity within our body. If you measure the antioxidant capacity of your blood after eating regular pasta, it goes up a little. If you replace 30 percent of the wheat flour with sorghum flour, it doesn’t go up much higher. But, if you eat 30 percent red sorghum flour pasta, the antioxidant capacity in your bloodstream shoots up about 15-fold, as seen below and at 2:22 in my video. Red sorghum? Yes. In fact, there are multiple types of sorghum—such as black sorghum, white sorghum, and red sorghum. Below and at 2:31 in my video is how they look in grain form (including yellow sorghum). Red sorghum and especially black sorghum have extremely high antioxidant activity, comparable to fruits and vegetables, as seen here and at 2:41. The problem is I can’t find any of the colored sorghum varieties. I can go online and buy red or black rice, purple, blue, or red popping corn, and purple or black barley, but red or black sorghum can be harder to find. White sorghum is widely available for about four dollars a pound, though. Does it have any “unique nutritional and health-promoting attributes”? It’s promoted as “An Underutilized Cereal Whole Grain with the Potential to Assist in the Prevention of Chronic Disease,” according to a study title, but what is the “effect of sorghum consumption on health outcomes”? Epidemiological study As you can see below and at 3:20 in my video, an epidemiological study in China found lower esophageal cancer mortality rates in areas where more millet and sorghum were eaten, compared to corn and wheat, but that may have been due more to avoiding fungal contamination of corn than from any benefit of sorghum itself. Though, it’s possible. “Oats are the only source of avenanthramides,” which give oats some unique health benefits. Similarly, sorghum, even white sorghum, contains unique pigments known as 3-deoxyanthocyanins, which are strong inducers of some of the detoxifying enzymes in our liver and can inhibit the growth of human cancer cells growing in a petri dish, compared to red cabbage, for instance, which just has regular anthocyanin pigments. White sorghum didn’t do much worse than red or black varieties, which have way more of the unique 3-deoxyanthocyanins, so it may just be a general sorghum effect. You don’t know until you put it to the test. Researchers found that sorghum suppresses tumor growth and metastasis in human breast cancer xenografts. What does that mean? They concluded that sorghum could be used as “an inexpensive natural cancer therapy, without any side effects. We strongly recommend the use of [sorghum] as an edible therapeutic agent as it possesses tumor suppression, migration inhibition, and anti-metastatic effects on breast cancer” for humans. However, xenograft means human breast cancer implanted in a mouse. Yes, the human tumors grew more slowly in the mice-fed sorghum extracts and blocked metastasis to the lung. Yes, sorghum did the same for human colon cancer that, again, was in mice, but that can’t necessarily be translated to how human cancers would grow in humans, since not only do these mice not have a human immune system, they hardly have any immune system at all. They’re bred without a thymus gland, which is where cancer-fighting immunity largely originates. I mean, how else could you keep the mouse’s immune system from rejecting the human tissue outright? But this immunosuppression makes these kinds of mouse models that much more artificial—and that much more difficult to extrapolate to humans. And that’s a lot of what we see in the sorghum literature—in vitro data from test tubes and petri dishes, and data from rats and mice. There has been “a critical missing piece of the puzzle” needed to link laboratory data to actual beneﬁts in humans. Missing, that is, until now. COURSE: Appetizer, Side Dish DIFFICULTY: Moderate SERVINGS: 4 Ingredients ▢ 1 large red onion cut into 1/2-inch-thick slices ▢ ⅔ cup oat flour ▢ ¼ cup chickpea flour ▢ 1 cup Almond Milk ▢ 1 teaspoon rice vinegar ▢ ⅓ cup cornmeal ▢ ¾ cup bread crumbs 100% whole-grain salt-free ▢ ⅓ cup nutritional yeast ▢ 2 tablespoons Savory Spice Blend ▢ 1 teaspoon smoked paprika Instructions Preheat the oven to 425F. Line a large baking sheet with a silicone mat or parchment paper and set aside. Separate the onion slices into rings. Transfer to a bowl and set aside. In a shallow bowl, combine the oat flour, chickpea flour, Almond Milk, and vinegar. Stir to blend well. In a separate shallow bowl, combine the cornmeal, bread crumbs, nutritional yeast, Savory Spice Blend, and paprika. Mix well. In a row, line up the bowls of onion rings, batter, breading mixture, and the prepared baking sheet. Dip an onion ring into the batter, coating it all over. Transfer the onion ring to the breading, tossing to coat. Use a clean, dry hand to sprinkle the breading onto the onion as needed. Place the coated onion ring on the baking sheet and repeat with the remaining ingredients, arranging the rings in a single layer. Use a second sheet if needed. You should have enough batter and breading for about 20 onion rings. Bake for 10 minutes, then remove from oven and carefully turn rings over. Before McDonald’s started using hydrogenated vegetable oils to fry its fries, the company used good, old-fashioned beef tallow. Many other fast food restaurants did, too, including Burger King, Wendy’s, Hardee’s, Arby’s, Dairy Queen, Popeyes and Bob’s Big Boy. For centuries, tallow (or beef fat) was considered a healthy and delicious fat for frying, baking and more. It was only once cheap, highly processed vegetable oils became widely available in the U.S. and elsewhere that tallow and similar animal fats (like schmaltz and lard) went out of fashion. Can you still eat tallow? Yes, and in moderation, some it can be a healthy fat to cook with, especially compared to margarine or processed shortening. Grass-fed beef fat can be a great source of oleic acid, conjugated linoleic acid (CLA) and other fatty acids that are thought to be good for increasing “good” cholesterol levels and supporting cognitive/brain health and a strong metabolism. What is tallow? Tallow is fat rendered from beef (or less often mutton), which is why it’s sometimes called beef lard. Like many other saturated fats, it’s solid at room temperature but melts into a liquid when heated. Tallow’s appearance and texture are described as being similar to butter’s, since it’s solid and a beige/white color when cooled. Many consider the best quality beef tallow to be rendered from the fat around the kidneys, although it can also be made from rendering other fat. Consuming saturated fat as part of a healthy diet has also been shown in some cases to have an inverse relationship with obesity-related type 2 diabetes. 2. May help support weight loss/management Tallow is rich in CLA, a fatty acid that studies have suggested can support a healthy metabolism and may lead to fat burning. As noted above, some research has suggested that the specific saturated fats in tallow, such as stearic acid, may have a neutral impact on cholesterol levels. There is some indication that consuming tallow as part of a balanced diet may help improve cholesterol levels. One long-term study of men found that those on a diet low in saturated fats and cholesterol, and enriched in polyunsaturated fats, had fewer fatal atherosclerotic events compared to the control group. However, it’s important to note that this study did not specifically examine tallow. While some components of tallow may have potential benefits for heart health, the scientific evidence is not conclusive. The balanced composition of fats in tallow and its potential effects on cholesterol levels warrant further investigation. However, it’s important to note that individual responses to dietary fats can vary, and overall diet quality and lifestyle factors play crucial roles in heart health. As with any dietary change, it’s advisable to consult with a healthcare professional before significantly altering fat intake. How to use In terms of cooking, what is tallow good for? Because it has a high smoke point, it’s a good fat for frying, baking, sauteing and roasting. It can help give crusts, pastries, fried foods and baked goods a crumbly texture. Some popular uses for tallow include making: Donuts Fritters Pie crusts Flour tortillas Mexican recipes, like fried plantains and tamales Cookies Pound cake Biscuits Fried pork, chicken and other fried meats Lardo Fried vegetables, latkes and veggie fritters Where to buy tallow Look for organic tallow sourced from grass-fed cows at a local farmers market or health food store. You may also be able to find it at your local butcher shop. How to make tallow Purchase some grass-fed beef fat, such as from a butcher shop or farmers market. You may need to buy a big chunk before grinding or cutting it up and rendering it into liquid fat. Grind the fat, or cut it up into very small pieces (or ask the butcher to do this for you). Put the fat into a slow cooker on low or medium for several hours. You will hear crackling noises while it cooks. Once the noise stops and there are only liquid tallow and some crispy bits (called greaves or cracklings), it’s done. Try to turn the heat off as soon as the noise stops. Let it cool off for an hour, then strain it through a mesh strainer and store in a glass mason jar. If you keep it in an airtight container it doesn’t need to be refrigerated short term, however some people choose to refrigerate it if keeping it for a while. Tallow soap Traditionally, many soap bars were made with tallow, since it helps harden and lather soap while also supporting skin’s natural barrier. If you’re familiar with making soap at home using vegetable oils, you can try using tallow instead. To make homemade tallow soap, combine it with sodium hydroxide, water, jojoba or almond oil, along with essential oils, such as lavender, to improve the smell and soothing quality. Alternatives What can you use instead of tallow (besides lard)? Grass-fed butter is a good alternative and can be used in similar ways as tallow, since they contain mostly the same types of fats. Both are between 40 percent to 60 percent saturated fat. Some people may prefer the taste of butter, especially in baked goods. However, one advantage of tallow is that it’s dairy-free and tolerated by those with lactose intolerance/dairy allergies. Quality oils, such as coconut oil and avocado oil, can also be good alternatives that supply you with a mix of healthy fats. As more people strive to improve their health, lose weight, and get more fit, this figure is expected to continue climbing. The general consensus among consumers is that protein supplements are “natural,” and since they are typically found in health food stores and wellness sites, then they must be safe. But are they? The Clean Label Project’s Protein Category analyzed 160 products from 70 of the leading brands for protein supplements. The 2024-25 Protein Powder Category Report provides vital data regarding some concerning ingredients and potential contaminants that consumers should know before taking them. The results are eye-opening. An alarming 47% of the products tested exceeded the toxic metal safety threshold set forth by California Proposition 65. In simple terms, most of the protein supplements tested were potentially unsafe. Understanding proposition 65: Context for the findings To put the findings in context, you have to understand Proposition 65. This California law has a list of chemicals maintained by the state. These chemicals are believed to cause reproductive harm or cancer in humans. Businesses must place warning labels on foods containing these chemicals at levels that exceed the “safe” levels set forth by the law. The Proposition 65 list contains many synthetic and natural chemicals commonly found as ingredients or additives in solvents, dyes, household products, pesticides, drugs, and food. These chemicals may be used in manufacturing or as a byproduct of a chemical process, such as fumes or exhaust. Key findings from the study The study tested 160 products from 70 popular brands for 258 heavy metals and chemicals, focusing on heavy metals and bisphenols. The analysis yielded a total of 35,863 findings. 47% of all tested products exceeded state or federal safety regulations, including Proposition 65. 21% of all products contained more than double the acceptable levels of lead as defined by Proposition 65. Organic protein powders: 79% exceeded Proposition 65 levels for lead. 41% contained over twice the acceptable levels of lead. Plant-based protein powders: 77% exceeded Proposition 65 levels for lead. Whey protein powders: 28% exceeded Proposition 65 levels for lead. Collagen protein powders: 26% exceeded Proposition 65 levels for lead. Chocolate protein powders: 65% exceeded Proposition 65 levels for lead. 29% contained over twice the acceptable levels of lead. These findings highlight significant safety concerns regarding heavy metal contamination in protein powders, particularly in organic, plant-based, and chocolate varieties. What should you look for in a protein powder? The analysis revealed that plant-based protein powders had the highest levels of contaminants, while whey-based protein powders showed the lowest levels. 					<description><![CDATA[<p>Michael Greger M.D. FACLM via Nutrition Facts &#8211; How do we explain studies that suggest overweight individuals live longer? Martin Luther King Jr. warned that human progress is neither automatic nor inevitable, and the same may be true of the human lifespan. In the 1800s, life expectancy was less than 40 years, but it has been “advancing steadily” over the last two centuries, “increasing at approximately 2 years per decade”—until recently. Longevity gains appear “to be faltering or even being reversed.” Thanks to the obesity epidemic, we may now be raising the first generation to live shorter lives than their parents. A downward trend in longevity “This downward trend in longevity will almost certainly accelerate as the current generation of children—with higher body weights from earlier in life than ever before—reaches adulthood.” Current trends “potentially signal a looming social and economic catastrophe” if the obesity epidemic continues unchecked. In the coming decades, some predict we may lose two to five years or more of life expectancy in the United States. To put that into perspective, a miracle cure for all forms of cancer would only add three and a half years to the average U.S. life expectancy. In other words, reversing the obesity epidemic might save more lives than curing cancer. The evidence that being overweight increases our risk for debilitating diseases like diabetes is considered “indisputable.” However, surprisingly, there is controversy surrounding body weight and overall mortality. In 2013, scientists with the Centers for Disease Control and Prevention (CDC) published a meta-analysis in the Journal of the American Medical Association suggesting that being overweight was advantageous. Grades 2 and 3 obesity, such as being an average height of 5’6″ and weighing about 216 pounds (98 kg) or more, were associated with living a shorter life, but grade 1 obesity, weighing about 185 to 215 pounds (84 to 97 kg) at that height, was not. Being overweight (about 155 to 185 pounds/70 to 83 kg at 5’6″) appeared to be protective compared to those who were a “normal weight” of 115 to 155 pounds (52 to 69 kg). The overweight individuals, those with a body mass index (BMI) of 25 to 30, appeared to live the longest. Headline writers were giddy. “Being overweight can extend your life rather than shorten it,” read one. “Dreading your diet? Don’t worry—plump people live LONGER than their skinnier counterparts…” read another. “Extra pounds mean a lower chance of death.” Not surprisingly, the study ignited a firestorm of controversy in the public health community. The study was called “ludicrous,” “flawed,” and “misleading.” The chair of nutrition at Harvard lost his cool, calling the study “really a pile of rubbish” and fearing the food industry might exploit the study in the same way the petroleum industry misuses “controversy” over climate change. Public health advocates can’t just dismiss data they find inconvenient, though. Science is science. But how could being overweight increase the risk of life-threatening diseases, yet, at the same time, make you live longer? This became known as “The Obesity Paradox,” the subject of my video Is the Obesity Paradox Real or a Myth?. The solution to the puzzle appears to lie with two major sources of bias, the first being “confounding by smoking.” The nicotine in tobacco can lead to weight loss. So, if you’re skinnier because you smoke, then no wonder you’d live a shorter life, albeit with a slimmer waist. The failure to control for the effect of smoking in studies purporting to show an “obesity paradox” leads to the dangers of obesity being “grossly underestimated.” The second major source of bias is reverse causality. Instead of lower weight leading to life-threatening diseases, isn’t it more likely that life-threatening diseases lead to lower weight? Conditions such as hidden tumors, chronic heart or lung disease, alcoholism, and depression can all cause unintentional weight loss for months or even years before they are even diagnosed. It’s normal to be overweight in the United States, for example. So, people who are “abnormally” thin—in other words, at an ideal weight—may be taking care of themselves, but they may instead be “heavy smokers, frail and elderly, and seriously ill with weight loss due to their disease…” To put the obesity paradox to the test once and for all, The Global BMI Mortality Collaboration was formed, reviewing data from more than 10 million people from hundreds of studies in dozens of countries—the largest evaluation of BMI and mortality in history. To help eliminate bias, the researchers omitted smokers and those with known chronic disease, then excluded the first five years of follow-up to try to remove from the analysis those with undiagnosed conditions who lost weight due to an impending death. And? The results were clear: “This analysis has shown that both overweight and obesity (all grades) were associated with increased all-cause mortality”—a greater risk of dying prematurely. So, “adjusting for these biases leads to eliminating the obesity paradox.” In other words, the so-called obesity paradox appears to be “just a myth.” Indeed, when intentional weight loss is put to the test, people live longer. There are bariatric surgery studies like the SOS trial that show that weight loss reduces long-term mortality, and randomizing study participants to weight loss through lifestyle changes shows the same thing. Losing a dozen pounds through diet and exercise was found to be associated with a 15 percent drop in overall mortality. Now, exercise alone may extend lifespan even without weight loss, but there appears to be a similar longevity benefit of weight loss through dietary means alone.
