Many popular stone fruits, such as cherries, plums, peaches, nectarines, mangos, and dates, are in season in late summer. COURSE: Breakfast, Dessert, Snack DIFFICULTY: Easy SERVINGS: 4 Ingredients ▢ 3 tbsp ground chia seeds ▢ 1.5 cups fresh or thawed frozen diced mango ▢ 1 tsp fresh lemon juice ▢ 2 pitted soft dates, soaked for 10 minutes in hot water and then drained ▢ 3 ripe apricots, pitted and quartered ▢ 3 ripe plums, pitted and cut into 1-inch pieces ▢ 2 ripe peaches or nectarines, pitted and cut into 1-inch pieces ▢ 2 cups pitted cherries Instructions In a small bowl, combine the chia seeds and 1/4 cup water and mix well. Set aside for 10 minutes to thicken. In a food processor or a blender, combine the mango, lemon juice, dates, and the chia mixture and process until smooth. Divide equally among four small glass dessert bowls. Cover and refrigerate until firm, 4 hours overnight. Combine the apricots, plums, peaches, and cherries in a large bowl. Toss gently to combine. The riper the banana, the sweeter the flavor, so just a small amount of Date Syrup is needed. Coarsely crushed walnuts provide a welcome crunch, and the Blackberry-Almond Butter Sauce adds a bit of healthy decadence if you want to spoon it over the cake. COURSE: Dessert DIFFICULTY: Moderate SERVINGS: 9 Ingredients ▢ 1 tablespoon ground flaxseeds ▢ 2 tablespoons warm water (for the flaxseed) ▢ 1½ cups mashed ripe bananas (2 to 3 large bananas) ▢ ¼ cup unsweetened soy milk ▢ ¼ cup Date Syrup ▢ 1 teaspoon fresh lemon juice ▢ 1 teaspoon pure vanilla extract ▢ 1 cup almond flour ▢ ½ cup oat flour ▢ 1½ teaspoons aluminum- and sodium-free baking powder ▢ ½ teaspoon ground cinnamon ▢ ½ cup coarsely crushed walnuts (optional) Instructions In a small cup or bowl, combine the flaxseeds and water. Stir well, then set aside for 10 minutes. Preheat the oven to 350°F (175°C). Line an 8-inch (20-cm) square baking pan with parchment paper. In a large bowl, combine the mashed bananas, soy milk, Date Syrup, lemon juice, vanilla, and flaxseed mixture. Mix well. Whisk in the almond flour, oat flour, baking powder, and cinnamon until evenly mixed. Fold in the walnuts. If the batter is too thick, stir in a little more soy milk, 1 tablespoon at a time. Transfer the cake batter into the prepared baking pan and smooth the top. Bake for about 30 minutes, or until lightly browned on top. Remove the pan from the oven and set aside to cool completely. COURSE: Dessert DIFFICULTY: Easy SERVINGS: 12 Ingredients For the Crust ▢2 cups rolled oats (or 1 cup [120g] raw cashews and 1 cup [80g] rolled oats) ▢2 cups packed, pitted dates ▢¼ cup lime juice ▢2 teaspoons lime zest For the Filling ▢2 pounds frozen mango, defrosted (about 6 cups, diced) ▢2 ounces unsweetened dried mango, soaked in a very small amount of water until soft ▢2 cups raw cashews ▢¼ cup lime juice ▢2 teaspoons lime zest Optional Toppings ▢1-2 pounds of fresh raspberries ▢Unsweetened coconut flakes ▢Lime zest ▢Chopped mint leaves Instructions For the Crust In a food processor fitted with an “S” blade, process the oats into a flour-like consistency. Add the dates and process until a ball forms. Then add the lime juice and zest. If it is too wet, add a few more oats until the proper consistency is reached. For MATCHA: Simply blend two ingredients—powdered matcha green tea and blended frozen bananas—before freezing. (Please make sure the matcha is sourced from Japan, not China, due to lead contamination concerns.) COURSE: Dessert DIFFICULTY: Easy SERVINGS: 4 TOTAL TIME: 10 min INGREDIENTS ▢4 bananas frozen (break into chunks before freezing) ▢2 tablespoons almond butter ▢1 cup strawberries sliced ▢1 piece split and scraped vanilla bean or 1/2 teaspoon vanilla extract INSTRUCTIONS Combine the bananas and almond butter in a food processor and blend until smooth and creamy. Add the strawberries and vanilla and pulse to mix well, leaving a few solid bits of strawberry throughout. Transfer the nice cream to an airtight container and freeze for 30 minutes for a soft texture or for 1 to 2 hours for a firmer texture. COURSE: Dessert DIFFICULTY: Easy SERVINGS: 16 (2-inch brownies) EQUIPMENT Food processor INGREDIENTS ▢1 cup raw walnuts ▢1⅓ cups dates, pitted ▢½ cup raw almond butter ▢½ cup unsweetened cocoa powder ▢⅓ cup crushed pecans INSTRUCTIONS Grind the walnuts and dates in a food processor until finely ground. Add the almond butter and process until well mixed. Add the cocoa powder and pulse to mix well. Transfer the brownie mixture to an 8-inch square baking pan. (If you line the pan with parchment paper, it will make it easier to remove the brownies.) Use your fingers to press the mixture evenly into the pan. (You can place a piece of parchment paper on top of the mixture as you press it into the pan to prevent it from sticking to your hands.) Once the brownies are firmly pressed into the pan, sprinkle the top evenly with the crushed pecans, pressing them into the top of the brownies. The trick that helps make this recipe smooth and creamy is soaking the cashews for the delightful filling overnight. Interventional trials have shown that eating nuts improves artery function, and nut consumption may also improve blood sugar control, lower cholesterol, suppress inflammation, reduce oxidative stress, and feed our friendly gut flora. COURSE: Dessert, Snack DIFFICULTY: Moderate SERVINGS: 20 INGREDIENTS For the Crust: ▢1 ½ cups rolled oats ▢3 cups Medjool dates, pitted (about 36-40) ▢½ cup goji berries, dried ▢2 tablespoons lemon juice For the Filling: ▢3 cups raw cashews (soaked overnight in water) ▢2 young Thai coconuts, meat only ▢1 cup coconut water (from one of the coconuts) ▢1 ½ cups Medjool dates, pitted (about 20 dates) ▢lemon zest, to taste INSTRUCTIONS For the Crust: Place the oats in a food processor, and process until slightly broken down. Do not over-process. Add the pitted dates, goji berries, and lemon juice to the food processor, and process until all of the ingredients begin sticking together. If the mixture is not sticking together, add a few more dates and process until it is sticky. Press the mixture into a closed spring-form pan. Set the crust aside. For the Filling: Discard the soaking water and rinse the cashews. Set aside. Place the coconut meat and coconut water in a high-speed blender, and blend until well incorporated. Add the dates to the blender, and blend until smooth. Add the lemon zest and cashews, and blend until the mixture is smooth and creamy and no cashew pieces remain. Tip: Start on low, and slowly increase the mixing speed. If the blender’s motor turns off, wait a minute or two before resuming blending. Pour the filling on top of the crust, and place in the freezer for 3 to 5 hours, or until the cheesecake is hard. Delicious Beyond Keto Cacao Pumpkin Muffins Ingredients 1 tablespoon avocado or olive oil for the muffin liners 4 large eggs ½ cup organic pure pumpkin puree 4 tablespoons unsalted butter (melted and slightly cooled) 3/4 teaspoon organic liquid stevia (equals about ⅓ cup sugar) 2 teaspoons real vanilla extract 1.5 teaspoons pumpkin spice 6 tablespoons coconut flour 1/4 teaspoon sea salt 1 teaspoon baking powder 1/4 cup cacao nibs OR coconut flakes Instructions Preheat oven to 350°F. Line 6 muffin cups with foil or silicone liners. Spray or wipe liners with oil to prevent sticking (coconut flour can stick especially if you use paper liners). Set aside. Whisk eggs, pumpkin puree, melted butter, stevia, vanilla, and cinnamon in a medium bowl. Add in the coconut flour and salt, mixing patiently until very smooth. Then, mix in the baking powder. Finally, fold in cacao nibs or coconut flakes. Using a 4-tablespoon scoop (1/4 cup), scoop and pour the batter into the prepared muffin cups. Bake muffins until they are set and a toothpick inserted in their center comes out clean, 22-25 minutes. Transfer the muffins to a cooling rack and cool them completely before enjoying them (if they look odd to start, don’t worry – their texture significantly improves as they cool). Muffins can be stored in a sealed container for up to 5 days (but they won’t last!). They also freeze well up to 3 months. Enjoy!
